Hi, my name is Elisabeth Grace. You can call me Grace. Iām from Jakarta.
My position in Jungchan is Chef de Partie, I do pastry and bakery things mostly.
What made you want to work in a professional kitchen?
Actually I like working in a fine dining restaurant because I like to do small things in detail, and we have a pattern. I mean, like every 4 or 5 months, we change our menu. So, we do RnD, and that makes us not doing the same thing, in the prep way. I can learn something new.
How do you think your work shapes the guest experience?
For example, we are doing Rnd for season 13. We are making makgeolli bread. The hardest part is to find the best ratio for the flour. Indonesian flour and Korean flour have different moisture so we keep doing Rnd for finding the best result and it takes around 1 month to get the best result of our makgeolli bread.
What is one habit that made you better as a cook?
Sometimes when we have off days, me and my friends do cafe hopping to try some food or pastry in Bandung. For example, we tried Blond, they have a really nice pastry. And also Bagelicious!
How did you join Jungchan Dining?
I started May 2025 - I got recommended to work at Jungchan by my previous mentor chef.
He sees Jungchan has a potential for my career journey. Previously I worked in Jakarta at Skye and Charkoal, and at Locavore NXT.
What is your main responsibility during service?
During service, I need to make sure the plating is as perfect as possible, so we serve guests in a good condition and good taste.
What do you enjoy the most about working with the team?
We are a very solid team. We back up each other. No one stabs from behind. Sometimes we go on field trips together. Last time we went to a farm and a knife shop. After that we went for dinner and drinks.
What do you want to improve next?
Actually Iām not only doing pastry. I also do other stations, such as making sauces or base broth so I want to learn more. Not only pastry but also other things.
